Since assuming operations in 2005 from his father, Jaime Cardenas has steered the family farm. At Rancho Morelia's Wet Mill, cherries are promptly pulped post-harvest. Edelmira coffee meticulously processes the beans for export, upholding stringent quality benchmarks at its local dry mill.

Under optimal conditions—blessed with ample sun exposure and nutrient-rich organic soils—this coffee flourishes on a singular plot. Harvested by hand, the coffee cherries undergo pulping at the wet mill and ferment in open-air tanks for an extensive period of 36 hours (spanning one night and one day).
