Day 10. Rwenzori Yeast Fermentation - Uganda

This coffee undergoes a unique fermentation process using yeast, enhancing the quality and flavour consistency of the beans. The outcome is a wonderfully citrusy profile accompanied by delightful flavour notes.

In 2016, Agri Evolve began as a collection point for both Dried Ugandan Arabica (DRUGAR) and cherries. Traditionally, coffee processing in the Rwenzori Mountains was handled by farmers themselves, who typically dried cherries on tarpaulins under the sun. Initially, sourcing DRUGAR was much easier than purchasing ripe cherries, revealing that old habits are tough to break!

After investing in processing equipment, establishing demonstration farms, and hiring skilled staff, the second-year harvest saw a significant improvement in acquiring unprocessed ripe cherries.

Following the first season, processing facilities saw substantial enhancements, with the introduction of equipment such as a washer separator, mechanical dryers, hulling machine, and greenhouses.

As interest in Agri Evolve grew within the farming community, they became a reliable and trusted place for farmers to sell their coffee. They consistently offered fair prices and ensured timely payments, which, although simple, made a remarkable impact for the farmers.
