Nestled within the El Triunfo biosphere reserve, Rancho Morelia thrives in the southern part of Chiapas' Sierra Madre, a UNESCO-classified area. Since assuming operations in 2005 from his father, Jaime Cardenas has steered the family farm. At Rancho Morelia's Wet Mill, cherries are promptly pulped post-harvest. Edelmira coffee meticulously processes the beans for export, upholding stringent quality benchmarks at its local dry mill.
Under optimal conditions—blessed with ample sun exposure and nutrient-rich organic soils—this coffee flourishes on a singular plot. Harvested by hand, the coffee cherries undergo pulping at the wet mill and ferment in open-air tanks for an extensive period of 36 hours (spanning one night and one day). Subsequently, they are meticulously washed and sun-dried on the farm's open-air patio for ten days.
This exceptional coffee boasts a delightful profile, showcasing a luscious mouthfeel with prominent notes of Chocolate harmoniously complemented by hints of Vanilla, Plum, and Cinnamon. The protracted washed fermentation process intensifies the coffee's fruitiness and sweetness, culminating in a flawlessly clean and savory cup.
