1. Rancho Morelia - Mexico
Situated within the El Triunfo biosphere reserve, Rancho Morelia flourishes in the southern region of Chiapas' Sierra Madre, a UNESCO-designated area. Since taking over operations from his father in 2005, Jaime Cardenas has successfully guided the family farm. At Rancho Morelia's Wet Mill, coffee cherries are swiftly pulped right after harvest. Edelmira coffee carefully processes the beans for export, adhering to rigorous quality standards at its local dry mill.
Thriving under ideal conditions—bathed in sunlight and nourished by organic, nutrient-rich soils—this coffee flourishes on a single plot. The cherries are hand-harvested and then pulped at the wet mill, followed by an extensive fermentation period of 36 hours (spanning one night and one day) in open-air tanks. After fermentation, they are meticulously washed and sun-dried on the farm's open-air patio for ten days.
This remarkable coffee features a delightful flavor profile, presenting a rich mouthfeel with prominent notes of chocolate, beautifully complemented by hints of vanilla, plum, and cinnamon. The prolonged washed fermentation process enhances the coffee's fruitiness and sweetness, resulting in a perfectly clean and savory cup.
